Lactose and Dairy Free Babies of Beautifullyobsessedmummy


My children, now 1 and 3 years old, were both born with Lactose and Dairy Intolerance's. I've found it hard to get my head around this initially as there is no such intolerance in our family, but now I feel its fairly easy to live with...

Both my babies as new Born's seemed so poorly. With my first child, I thought he was just colic-y and struggled through the early new Born's days breast feeding him using Colief on prescription before each feed which helped him. He never had solid stools and also got Eczema as a baby once weaned. We struggled on trying to toilet train him which was very hard with constant loose stools. It wasn't until my second baby was born, and I finally got the strength to push and push the doctors for tests that she was diagnosed as Lactose Intolerant and my son was then also diagnosed as Dairy Intolerant (by then his body had got used to the Lactose and they described it as dairy intolerant instead.) Unfortunately the Colief didn't appear to work with my second born and we eventually gave up breast feeding and moved onto SMA Lactose Free Formula milk on prescription from the doctor. It was like someone gave me a new child when we changed from breast to the Lactose free formula, she stopped crying constantly, no longer seemed in pain and started gaining weight.

These are some very simple recipe's all Lactose Free and easy-peasy, they are also all cost efficient as basically I am replacing butter or margarine with either Lactose free spread/butter/margarine or a much cheaper equivalent - Vitalite:

Lactose Free Birthday Cake
My Little Bear's 3rd Birthday and my Little Pop's 1st Birthday cake:

  • 125g/4oz VITALITE (or lactose free butter) softened
  • 125g/4oz caster sugar
  • 2 medium eggs
  • 125g/4oz self raising flour

  1. Heat the oven to 180C/350F/Gas 4.
  2. Line two 18cm/7in cake tins with baking parchment
  3. Cream the VITALITE (or lactose free butter) and the sugar together until pale. Use an electric hand mixer if you have one.
  4. Beat in the eggs.
  5. Sift over the flour and fold in using a large metal spoon.
  6. The mixture should be of a dropping consistency; if it is not, add a little water (or soya milk).
  7. Divide the mixture between the cake tins and gently spread out with a spatula. Bake for 20-25 minutes until an inserted skewer comes out clean. Allow to stand for 5 minutes before turning on to a wire rack to cool.
  8. Sandwich the cakes together with jam, lemon curd or butter cream made with VITALITE (or lactose free butter) and icing sugar and berries or just enjoy on its own.
    (I then used some butter cream made with VITALITE (or lactose free butter) and icing sugar to stick down my royal icing and then added a photograph (of course) from ebay, printed on icing paper to my cake. 
Lactose Free Victoria Sponge Cake
A Victoria Sponge for Family-Sundays using VITALITE (or lactose free butter) using the recipe as above.

Lactose Free Christening Cookies
 Christening Cookies for the children, using VITALITE (or lactose free butter) in the Shortbread recipe:
  • 125g/4oz VITALITE (or lactose free butter)
  • 55g/2oz caster sugar, plus extra to finish
  • 180g/6oz plain flour
  1. Heat the oven to 190C/375F/Gas 5.
  2. Beat the VITALITE (or lactose free butter) and the sugar together until smooth.
  3. Stir in the flour to get a smooth paste. Turn on to a work surface and gently roll out until the paste is 1cm/½in thick.
  4. Cut into rounds or fingers and place onto a baking tray. Sprinkle with caster sugar and chill in the fridge for 20 minutes.
  5. Bake in the oven for 15-20 minutes, or until pale golden-brown. Set aside to cool on a wire rack.
    (I then added VITALITE (or lactose free butter) mixed with icing sugar to make a butter icing and then used the same shape cookie cutters to cut through the white rolling icing and use the VITALITE (or lactose free butter) butter cream to stick on the photos i'd ordered printed onto icing paper from Ebay.

 My Little Bear's Birthday Cookies we made together to take into nursery for his Birthday made as above with the Lactose Free Christening Cookies recipe.

Lactose Free Shortbread Jams
I made these using the Lactose Free Christening Cookies recipe as above but added some lovely fruity jam to sandwich them together.
